Ingredients:

1 (5 1/2 pound) corned beef brisket with spice packet

7 small potatoes, peeled and diced

Four medium carrots, peeled and diced

1 medium onion, diced

3 cloves garlic, chopped

 

Directions:

Set the oven’s temperature to 300 °F (150 °C).

In the center of a roasting pan, place the corned beef brisket. Around the sides, place potatoes and carrots, and then top with onion and garlic. Before adding water to nearly wholly cover the potatoes, sprinkle the steak with the spice packet. Use a lid or thick aluminum foil to cover.

Corned beef should be roasted in the preheated oven for 5 to 6 hours or until it can easily be flaked apart with a fork.
