4 Cornish game hens

Two limes halved

Two teaspoons of olive oil

¼ teaspoon chili powder

¼ teaspoon ground cumin

kosher salt and ground black pepper to taste



Set the oven’s temperature to 425 °F (220 °C).

Rub a lime half on each hen. Season with chili powder, cumin, kosher salt, and black pepper after drizzling with olive oil. Hens should be placed on a rack in a shallow roasting pan.

For 15 minutes, roast birds in a preheated oven.

Reduce the oven’s temperature to 350°F (175°C).

Continue roasting for another 30 minutes or until the meat is no longer pink at the bone and the juices are clear. The thickest region of the thigh, close to the bone, should register 165 degrees Fahrenheit (74 degrees Celsius) on an instant-read thermometer. Remove from the oven, wrap in a double layer of aluminum foil, and let sit for 10 minutes in a warm place before slicing.
