2 tablespoons butter

Two tablespoons extra-virgin olive oil

One large onion, chopped

Five large Yukon Gold potatoes peeled and cut into 1/4-inch cubes

One large carrot, coarsely shredded

2 pounds of cooked corned beef, cubed

2 tablespoons chopped fresh parsley

½ teaspoon ground black pepper, or to taste

¼ teaspoon dried thyme leaves

1 pinch salt to taste



Over medium heat, melt butter and olive oil in a big skillet. For about 8 minutes, cook and toss onion until just starting to brown. Add the potatoes and carrot and stir. Cook for 15 minutes or until the vegetables are cooked.

Add salt, pepper, thyme, parsley, and corned beef after stirring. Cook for 10 to 15 more minutes, stirring frequently, until the hash is crisp and browned.
