Two tablespoons Herbes de Provence

1 ½ tablespoons olive oil

Two cloves garlic, minced

2 teaspoons lemon juice

8 (5 ounces) lamb loin chops

salt and ground black pepper to taste



Mix the herbes de Provence, oil, garlic, and lemon juice in a small bowl. Rub the mixture over the lamb chops; cover and chill for at least one hour or up to four hours for the tastiest results.

Set an outdoor grill over medium-high heat and quickly oil the grates.

Chops should be salted and peppered.

Chops should be cooked for 3 to 4 minutes on each side or until they are browned on the exterior, and an instant-read thermometer put into the center registers at least 125 degrees F (52 degrees C) for medium-rare.

After moving the chops to a platter lined with aluminum foil, give them five minutes to rest before serving.
