Ingredients:

5 pounds leg of lamb

4 cloves garlic, sliced

salt and ground black pepper to taste

Two tablespoons fresh rosemary

 

Directions:

The oven should be preheated to 350 degrees F (175 degrees C).

Make deep slits every three to four inches on the top of the lamb leg. Insert garlic pieces into the slits. Sprinkle on plenty of salt and pepper.

Place the lamb on a roasting pan and cover it with a few fresh rosemary sprigs.

For medium-rare to medium-doneness, roast the lamb in the preheated oven for 1 3/4 to 2 hours or until an instant-read thermometer inserted into the center of the meat registers at least 135 degrees F (57 degrees C).

Lamb should rest for at least 10 minutes before being carved. Cover with foil.

Serving hot, please.
