½ sweet onion, roughly chopped

½ cup red wine

Three tablespoons honey

Two tablespoons of Dijon mustard

Two tablespoons of lemon juice

Four garlic cloves minced

One tablespoon of ground thyme

One tablespoon of dried rosemary

2 teaspoons ground basil

One teaspoon salt

One teaspoon of coarse ground black pepper

¼ cup tapioca starch

1 ½ pounds sirloin lamb chops, room temperature



In a slow cooker, mix red wine and onion.

Combine the honey, mustard, lemon juice, garlic, thyme, rosemary, basil, salt, and pepper in a small bowl. Whisk until well combined. Whisk in the tapioca starch after adding it. Give the mixture at least five minutes to thicken.

Lamb chops should be entirely covered after being dipped in the honey-mustard mixture.

Arrange the chops in a single layer over the red wine and onion mixture in the slow cooker. On top, add the remaining honey-mustard mixture.

Cook on Low for 4 1/2 hours with the lid on the slow cooker.
